I used Evolution for a long time but eventually switched to KMail because, IMHO, KMail seems to be much more flexible and is definitely easier for a user to configure and customize. In any event, I think you still have 'Drafts' folders in Evolution, don't you? Can you not effectively 'suspend' a mail in 'Drafts' until you are convinced it is ready to send?
