I have three under sendmail and six under postfix. Looks like sendmail uses fewer to me. As far as one being easier to setup then the other it all depends on which one you grow up on. YMMV.
I think he was referring to 'daemons running as root' and I know that postfix follows the philosophy that 'no process runs with more privs than it needs'. So it would be a question of which has more daemons running as root.
