If you get GAIM 0.64.0 from usr-local-bin.org and Evolution 1.4 from the same site then they are compiled using GTK2 and Gnome2 libraries. This means that gnomecc (which is the control centre for Gnome1) don't control the look and feel for these apps. The control application you want is for Gnome2 which is located in /opt/gnome2/bin and is called gnome-control-center. I've used this to control the look and feel of Gnome2 apps. I also use QtCurve as my general theme. This theme is built for Gnome1, Gnome2 and KDE3 so that apps all share common look and feel such as fonts, colours and what not. You can also use Geramik which does the same thing but matchs everything to look like Keramik as far as GTK 1&2 apps are concerned. These themes take their hints from KDE. Don't know if this helps you.
