In 8.2 (i.e. Gnome2.2), this seems to have moved out of Nautilus. Rather annoyingly, the only way to control this is now using GConf editor. Open 'gconf-editor', then select "apps" from the list on the left, then "nautilus", then "preferences". From the list of options that appears on the right, you need to find "show_desktop" and deselect it, then quit gconf-editor.
