A clean full install of 8.1 on my portable - a Toshiba Satellite - which it now shares with Windows Me worked very well, and StarOffice fonts are fine on that machine.
It sounds like you need to install your fonts again. I use KDE and there is a font installer under System in the Control Center. Copy the fonts you want from your WinME installation to the SuSE box (I just keep mine in a folder in /home) and install them and StarOffice should be fine.
