Brad, I have a similar configuration that you have (slower Athalon chip). I would suggest that you try using YaST1. I know that YaST1 goes away in 8.0. I run several Linux installfests each year, and I have seen similar problems with other vendors as well a SuSE. For YaST1, I boot from the floppy because my SCSI CD-ROM is not recognized as a boot device. This is only a work-around, but may have a good chance of working. I've been trying to do an installation with Yast2 and Suse 7.3. I have been unable to do the install thus far. Each time the installation proceeds until the system locks up. Many times it is at a similar point in the installation, around 70% installed (it's copying files at that point). When it happens nothing will respond and I have to do a hard reboot.
