Failing that, anyone know a good console utility that'll parse just the header like that? I'm not looking for something that dumps 10 lines/file, or any of the author/genre/album/etc stuff. Just as much of the mpeg details as will fit comfortably and concisely on one (perhaps longish) line of a console.
To answer my own question, the aptly-named "mp3info" utility by Thorvald Natvig will do this for you. The format of the output is configurable, so if you want the album name or excessively verbose output it'll do that for you too.
