Aha! Thanks for making me investigate further. I would enter the name in the in the "Edit Name" box and it wouldn't apply. But, if you click on the "Edit Name" bar along side of it another dialogue box appears and at the bottom of that dialogue box there is another bar that allows you to choose the format. Mine was set to "Custom" and would not take. I chose "Full Name" and now it works.
Too many steps and dialogue boxes. I will have to go through all of these steps for any address I input as it keeps reverting to "Custom".
Problem solved but not happy about it.

If you don't like to use a formated name, you can choose to display the Given and Family names in separate columns. That way you will only have to edit the name in the text box next to the "Edit name" button. To change your view, go to View -> Modify View and update the list of columns selected.
