I did then remove xf86-video-nouveau from Yast. There was a question I did not take a note on, something to do with Mesa-dri-nouveau that I accepted to pull; at that point, some nvidia packages were pulled in.
Now I have a combination of nvidia and nouveau packages:

Is this ok? I would expect to not see any nouveau there at this point.
Also now when I do
zypper install-new-recommends
The following NEW package is going to be installed: xf86-video-nouveau
1 new package to install.
I do not want that. How do I actually make this work without being forced to go back?

Nouveau should be blacklisted as module so that it is not loaded and used. I am not sure if Nvidia rpm install script does this.
Blacklisted modules are defined in a directory /etc/modprobe.d. There should be a file called 50-blacklist.conf. There should be a couple of lines as follows:
blacklist nouveau options nouveau modeset=0
If not, just add them at the end of the file, save it and run mkinitrd command as root.
This is my setup. Nvidia module loads, not Nouveau.
There might be other suggestions from this list as I am not an expert in module management in Linux generally.
From your email above, the Nvidia driver version being loaded is 340.102, which is a legacy driver for older Nvidia cards. This is the same driver used on my laptop as I have an older card which is not supported by newer drivers.
