Correct, legacy functionality like desktop or tray icons are not supported
in GNOME Wayland, nor does upstream have any plans of porting them to
wayland.

I guess that means GNOME is going to cease being a desktop environment.

Sad to see this trend of removing functionality that has been available
and happily used by many (the majority of users even) for a decade and
more.

This is incorrect. Desktop icons are still available with Wayland. Its future
was incertaint when the comment was written, but it is not living in a separate
binary from nautilus main file manager.

Regarding tray icon, they are relying on X11, I'm not sure they can still
properly work with Wayland (this is independant of GNOME itself, issue will be
the same with any DE running in Wayland).
