I fixed the issue by running
# systemctl enable autofs.service

and changing the fstab line to

server:/ /mnt/ nfs4 defaults,noauto,comment=systemd.automount 0 0

as suggested at
http://www.happyassassin.net/2011/05/12/cute-systemd-trick-of-the-day-auto-mounting-remote-shares/

Two things: I cannot say whether the enable did the trick or shifting the
actual mounting to on-demand, which first happens when the desktop comes on as
the nfs mount is not required for boot,
second I cannot tell if this actually fixes the issue in means of "creating the
necessary prerequisite" or if it is merely a workaround like "this triggered
something else and that avoids the issue".
I'll leave that to you to decide.
