The Gnome2 control centre will adjust fint settings for gtk2 apps. For gtk1.x apps, you'll need to use the gnome1 Control centre. This is on the installation media. If you're finding that some gtk2 apps aren't obeying the gnome2 settings, you obviously have a bigger problem - are you sure these apps don't control their own settings? If you're finding that some gtk2 apps aren't obeying the gnome2 settings, you obviously have a bigger problem - are you sure these apps don't control their own settings?

Are you sure you're using the gtk1 control centre (gnomecc, IIRC)? The gtk2 one is the one that appears in nautilus.
