Yes, you can do it explicitly in fetchmail, but you
can let fetchmail
simply handle over the email to the system MTA (postfix), which
explicitly finally handles it over to the LDA, typically procmail.
It is explicitly set, but in a different config file :-)
as in (excerpt from .fetchmailrc):
mda '/usr/lib/sendmail -i -oem -f %F %T'
which then hands off to local procmail
