From what I can tell, Evolution is a Gnome app. In the install that comes with SuSE, there is no cups management really in Gnome. I had to install it myself but the apps still won't use it :( This behavior is the same for any Gnome based app. Like Abiword and Gnumeric to name a few. So I'm not sure on how to fix this issue. You can try adn compile the program and see if your luck is better than mine.
