I don't know about the boot issues but I wouldn't recommend using an unpartitioned drive for LVM. It's all too easy to run a command that assumes some other structure at the beginning of the disk (MBR etc or whatever) and overwrite the LVM metadata. It's recoverable, of course, but is an unwanted and unnecessary pain. IIRC, using a raw disk is also officially deprecated.
