SOLVED!

Ok, as said above, adding psmouse.elantech_smbus=0 as a kernel boot parameter,
solved the problem.

Not sure about 5.10... It's kind of difficult to try it now, but for sure this
is a regression since it's working on the same laptop with openSUSE 15.2
