I don't agree - the disc fragmentation of Ubuntu is one of my biggest frustrations with it.
Personally, I've been taking advantage of the marketing for years - openSUSE is a *chameleon*, and the DVD reflects that. Need a LAMP server? Gnome Desktop? XEN Server? Laptop tools? There's a pattern - one click - for each of those.
Sure, lots of people do that, because they know what they're doing. But even more people use openSUSE for years and years and never realize that server installation is even an option. Too few people think about openSUSE as an option on the server - and that would instantly change if a server cd were provided and was a visible option on software.opensuse.org, in announcements etc. That wouldn't mean that the server option should be removed from the dvd. Of course there might be other less magical solutions to the problem ;-) Like redesigning the installer a little bit so the server option becomes visible even for people who never click on "Other". Mentioning server stuff in announcements.
