One thing I've used the live version for is testing a ThinkPad before I bought it. There is also system repair, which I have used or just accessing a command line to run something like fdisk. Sometimes you really don't need a full distro, just enough to do something. BTW, I believe you can install the full distro to a USB drive, though I haven't tried that.
