That's wrong. You can simply prevent automatic loading of nouveau.
Thus, I'd be surprised to learn that there is any practical way to make an automatic switch between FOSS and proprietary with any NVidia gfxchip.
Even if nouveau was loaded, it still may be possible to do rmmod nouveau; modprobe nvidia.
