I've now found that I can drag/drop an icon as a replacement for "add to panel" that went missing on me, so I can fix that bit of damage as well. Seems the desktop has become exclusively a place to hang a background image, but whatever, I don't clutter up my desktop anyway.
So the pile of wreckage is shrinking, but there's still more left than I expected to ever meet in a rolling stable release.

'Stable' - I don't think that word means what you think it means... If by 'stable' you mean "I want to have all the features and functionality that I had yesterday, in exactly the same way I had it yesterday, tomorrow and every day into the future" then I'm afraid any rolling release won't be for you, besides one you might roll your own If by 'stable' you mean "I want the latest software from all the various upstream projects, integrated and delivered in a single distribution, and provided in a way that is proven to work before it is delivered", then that's what we're doing here with Tumbleweed Plasma 5 is a big change from KDE 4, our team have done a sterling job of keeping everyone informed about what was coming and why it needs to come now. Please do your best to learn the new way rather than bemoaning the loss of Feature X or Favourite Setting Y.
