The packman approach worked (and was required for H.264 support) for a long time. If you would like to switch you should only switch the ffmpeg packages and not everything to packman. (And set the priority of the repo lower.) If you are scared to break your system you probably need to wait a bit until I can clarify the H.264 support situation via openh264 with others but it may not work yet out of the box.
