Don't think ssh is the tool to use. Telnet is OK, but you'll need to specify the correct port - the standard 23 won't work.
Clearly this is a case of that metaphysics rule that its always harder the first time you try it and once you can convince yourself that you have made the right settings it WILL work. The trouble is that I don't have that confidence.
When I do ps -A (as root) I can see smtp things but no reference to imap or pop - whch rather bothers me.
No, that's normal. The likes of pop and imap are started by the xinetd daemon, whenever an incoming connection is received. You should, however see a "listener" on port 110 (pop) and 143 (imap). Check with netstat -an Active Internet connections (servers and established) Proto Recv-Q Send-Q Local Address Foreign Address State tcp 0 0 0.0.0.0:143 0.0.0.0:* LISTEN tcp 0 0 0.0.0.0:110 0.0.0.0:* LISTEN With regard to postfix, it's most likely listening only on 127.0.0.1, so the rest of the network can't get to it.
