However, once the image is built, when I test it, only the user tux is able to login, not else the root user. When I try to sudo su or to login with root with the same configured password, the system says that is incorrect.

I assume the image configuration has some script part in e.g config.sh which messes with the root account. It's not uncommon that people use script code in config.sh to prevent root login.
