If the vga-mode is changed from nothing to some resolution, or from one resolution to another, mkinitrd has to be called in order to include the correct splash-images.
For me mkinitrd only includes the 1280x102 one if I have set GRUB to that resolution, hence if I had it on 1024x768 and change the resolution in GRUB, the splash is not included in initrd.

If I do the same and run mkinitrd afterwards there is.

This is definitely lower priority than if installing a new kernel breaks the existing working bootloader configuration.
