Following instances are common. 1. When switching to different components like calendar or task from mail while new mails are being downloaded or moving mails to other folder. 2. Double click task to edit. In these cases evolution hangs and doesn't do anything. I kill it using "evolution --force-shutdown". Then try to open it but doesn't open. I have to kill all evolution processes(data-server and alarm) in order to start evolution again.
