Would it be possible for you to remove the xournalpp dirs from `~/.config/` and
`~/.cache/` and try entering TeX into xournalpp again? That is, something like

> ~> mv .config/xournalpp{,.bak}
> ~> mv .cache/xournalpp{,.bak}

from a terminal and then start xournalpp as you would usually.
