Urghh, my silly typo. "2&>1" should be "2>&1".

The correct version:

sudo efibootmgr -v -v -c -d /dev/nvme0n1 -p 1 -w -L efibootmgr-manual -l
'\EFI\opensuse\shim.efi' 2>&1 | tee efibootmgr.log
