Just a hint without guarantee: from your description that the problem happens in similar way with different packages of libreoffice you tried I do not think the problem is caused by the libreoffice package, but rather something got corrupted in the libreoffice settings in your home directory or something is missing (e.g. the path to the java runtime after the last java update). I suggest to rename ~/.config/libreoffice/ to some other name (while no instance of libreoffice is running) and after this start libreoffice and check whether it makes a difference.
