Update: Looks like it's poppler that is broken. I tried Evince, Atril, and Qpdfview, and they all behave the same. PDF-XChange under Wine renders the fields just fine. Specifically, these are PDFs with saved fillable text fields that are being shown as blank. Checkboxes are properly displayed as checked.
