It appears that the EDITOR environment variable isn't set at all after an install, or, at least in my case, the first time i went to use crontab the var wasn't set and i couldn't edit my crontab. Setting EDITOR=/usr/bin/vim export EDITOR at the end of /etc/profile fixed it, although I couldn't find a reference doc saying that was the proper place for it.
