I used the -DVD one, and I am sure that I could choose systemd-boot offline. Being some kind an offline installer, with the chance to use systemd-boot with just two clicks away and with no particular tinkering, I would still expect to work. I've just tried the newest snapshot too and seems that it stays the way I found the earlier one. Anyways, good to know that it might not be a bug but a simple decision to make. After all, the installer blocks the user before it formats/deletes/creates partitions and/or lose data.
