Here is another strange observation:

TL;DR: When I first login using Gnome on X.Org and then using GNom on Wayland,
I see the full native resolution.

- The iMac Pro has a native resolution of 5120 x 2880 pixels

- When I first login using Gnome with wayland, the maximum resolution being
offered is 2560 x 1600 pixels

- When I logout and re-login using Gnome on X.Org, the 5120 x 2880 resolution
is offered as an option. So I select it and set desktop scaling at 200%, which
gives a nice looking display.

- When I logout and re-login using Gnome on wayland, the 5120 x 2880 resolution
is again offered as an option.
