When you disable nouveau packages, it means that you disable the GPU rendering, and all rendering is done on software instead, and the driver serves only for mode setting -- which costs log of power, and people don't want it. And, the instability of nouveau depends pretty much on the chip model, the kernel version, and the usage pattern.
