The problem is that nouveau is the only true open-source solution for using 3D
rendering on Nvidia graphics chip. When you disable nouveau packages, it means
that you disable the GPU rendering, and all rendering is done on software
instead, and the driver serves only for mode setting -- which costs log of
power, and people don't want it.
And, the instability of nouveau depends pretty much on the chip model, the
kernel version, and the usage pattern. So it's not always too bad, but it's
unstable enough to be looked as the first culprit of such system instability.
