It sort of makes sense but I cannot work out, how do I set up the mail

It is the one server with one IP address.

Yes, I've done that in the past with Postfix.
Its just a small change in the main config to list all the domains it
will accept.

I only had a small set, less than a dozen, and it would not change.

You can do this in /etc/sysconfig/postfix by setting POSTFIX_LOCALDOMAINS

If you needs are different I'm sure there some other way to do it,
possibly using one or other of the database methods or one of the MAP
files. See also "man 8 virtual" and
http://www.postfix.org/VIRTUAL_README.html

The Postfix documentation is extensive and there are many example files
and notes supplied and at the main web site.
