Uninstall TB and re-install it.

Make a backup of ~/.thunderbird just to be on the safe side before doing above.

ALTERNATIVE solution which you could try:

right-click on the TB icon and select icon settings>application and remove the '%' in 'thunderbird %'

and see if this works.
