Hi,

Boot processes should happen in parallel. However, when it tries to mount
an NFS share, it stalls completely for 10 seconds:

Why doesn't it do something else, like starting sshd while it waits?

Or does it have to stop, thinking that the nfs mount might be very
important?

How have you told systemd to run that service? If you put it in the wrong
place, it might be that it thinks it is an essential part of your file system
