All mirrors that are used are listed in /var/log/zypper.log or in equivalent
yast log in /var/log/YaST2/y2log .

Be aware that it could be very long list if you just run 'zypper up' after
installation. The http://download.opensuse.org/ redirector (called Mirror
Brain) can use different mirrors for different files within the same update
session. I got over 500 lines with last factory update which is a bit more
than half of the updated files.

Command:
grep "(log_redirects_curl)" /var/log/zypper.log
will list lines with all mirrors that are used.

Command:
grep "(log_redirects_curl)" /var/log/zypper.log | tail -n20
will list last 20 entries.

If last zypper.log doesn't show anything then you can use compressed logs.
They have file name like:
zypper.log-<date>.bz2

Command:
bzip2 -dc /var/log/zypper.log-<date>.bz2 | grep "redirects_curl"
