checked the settings in the Java Config tool... nothign seems to get
Java to actually work from within a browser. Outside of the browser,
Java apps work fine.

Any pointers?

I use openjdk version. Works fine with Firefox x86_64.
If You have Java plugin already installed try run as root:
update-alternatives --config java
update-alternatives --config javaplugin
The first command help to choose default java vm, and the second one - default
java plugin. More info in wiki →

OpenJDK does not work with most Java applets.

Sun recently released a 64-bit Java plugin, Not sure about openSUSE
11.0 but for 11.1 I was able to get it through YaST:
java-1_6_0-sun-plugin 1.6.0.u13-0.1.1-x86_64, in the updates repo. It
would not be a bad idea to remove any "OpenJDK" or "IcedTea" packages
you have installed at the same time.
