this if perfectly safe is you use "safely remove" (or do a "sync" command)

the slow mode writes immediately, but thus by small chunks, so the slowness, but then you can unplug the thing at once.

this is unnoticable if the computer is iddle, but in case of heavy disk load the writing can be delayed some seconds, and in case of very big file some minutes (I use a 300Gb HDD, so video copying needs some time :-)
