Sure, you could have just done

hdparm -X udma2 -d 1 /dev/hdc

That's all the boot.idedma script does. Useful to get it running on bootup,
but not actually necessary. In general, you only need rebooting when you're
replacing hardware or installing a new kernel. There are exceptions when you
run into a broken kernel driver that refuses to unload or something, but
those are few and far between
