The Meaning of Instructions to <tar>

Hi SuSErs :)

Could someone, please, be so kind, and explain the meaning of the syntax
in this most useful backup tar command :-

..................................................

tar clf - . | ( umask 0; cd /mnt; tar xvf - )

.....................................................

. . . presumably <umask 0> means that File Permissions remain unaltered.

What, please , do < - . > , and, just plain < - > mean ?
