Yeah I'm pretty much starting to think that dual boot Linux + Linux is just fundamentally broken and is only the realm of expert users. As such GUI installers shouldn't permit it with their default/guided/automatic partitioning used by regular users.

Huh? How are you going to automatically boot into Windows after hibernating it when using Linux bootloader? I do not see any difference here except you are less likely to accidentally corrupt Windows filesystem in this case.
reliable but broken in all versions of GRUB for a very long time, but at least it's possible to use the Mac's built-in firmware manager to switch reliably.
