The Shiitake is actually called the Black Mushroom in China, but Shitake 
in Chinese groceries, and have been cultivated in China for thousands of 
years, and come as dried mushrooms which you hydrate before use. Lovely 
mushrooms with very health-wise credentials.

But you already know this, right? :-)
