I accidentally blew my menu.lst away and managed to get back up after repeated atempts using the Repair option on the installation CD.
I currently have both kernel-default and kernel-desktop installed and have tried booting pointing to either one and both seem to work. (This is a laptop.) I also have the -devel version of each installed.

Perhaps that "kernel /vmlinuz" is incomplete.
Questions:
1. Should I have entries for both the default and desktop kernels?
Why not? If you have both kernels installed, you should have entries for both.
2. Do you see anything else I should fix?
3. I just notices that the -base versions (kernel-default-base and kernel-desktop-base) are not installed. Should they be?
