You can change the name from the command line, but it is not simple. I did it once and have some notes. In my case it was for a network printer:

cups type (one line):

~ # lpadmin -p cp1515n-ps-net -v "socket://bilbo.valinor" -L "Local network" -D "CP1510n in postscript mode, via network" -P /etc/cups/ppd/cp1515n-ps.ppd -E

hp type:

:~ # lpadmin -p cp1515n-hpijs-net -v "hp:/net/HP_Color_LaserJet_CP1515n?ip=192.168.1.3" -L "Local network" -D "CP1515n configured by hp device manager, via hpijs driver and network " - -P /etc/cups/ppd/HP_Color_LaserJet_CP1515n.ppd -E

In fact, it creates a new printer using the ppd of the old one, which has to be deleted by hand later.

To know the device for the existing printer, use lpstat:

:~ # lpstat -v net_cp1515n-ps
device for net_cp1515n-ps: socket://bilbo.valinor
