Obvious, as this is linux: check the log. :-)

/var/log/mail*

That logfile contains lines such as:

to=<bob@xxxxxxxxxxx>, orig_to=<root>, relay=local, delay=0.22,

Dec 28 15:31:02 barrowhillfarm postfix/qmgr[32358]: EEA665EF8D: removed

so it seems that root@xxxxxxxxxxx is sending mail to bob@xxxxxxxxxxx :)

However, /var/spool/mail/ is an empty directory - no files, no subdirectories
- so where is the local mail going?
