There are a few things in OOo that need java, I don't know exactly which.
Sometimes, after some packages updates, something in OOo stops working, and
when I look, there is no java defined in the OOo config.
To the best of my knowledge, the only thing in OOo that needs Java are
the various wizards. If you install OOo without Java it should work
fine.. unless you access a function that uses the wizards.
