I won't get into the legality of this(due to the css encryption
problem here in the states), but there is a dvdshrink type program for
linux:

I haven't played with it much.

You can also use MPlayer.  Once you run MPlayer on the DVD, you can dd
the disk to the hard drive and then re-encode it with mencoder as
well.  It's cli, but it's powerfull.  MPlayer/mencoder is in the
pacman repos.
