That depends on your needs. I'm currently using the UoW IMAP server,
but I understand Dovecot is good.

Anything that works is my only really need, I just want to get way from my
charter.net address but still having pop3/imap. I got sick of my ISPs email
service went down and I know more about the problem then they did, so I
figured running my own mail server would be a good idea/learning experience.
