I'd like to get rid of the XP and hidden partitions, and just have XP
installed in VMWare.
The question is whether I can just copy my whole XP partition or do I
need to
install XP Home in the VMWare Server. Are there other issues caused by
this
configuration I should be aware of?

a VMWare image out of it.
I think you want the free VMWare Converter tool. Google around for
converting physical drives to virtual images.
